Today is Memorial Day, a day off from work or school for many folks, and also for cookouts, picnics and barbecue. While that's all fine and good, let's not forget the true purpose of Memorial Day, a day set aside to honor our military men and women who gave their lives in the service of our country. Originally called Decoration Day and observed on May 30th, the history of Memorial Day dates back to just after the Civil War and makes for an interesting read. If you want to pay your respects to our fallen heroes but can't make it to Arlington National Cemetery for today's observance, you might find this list of state national cemeteries useful. And regardless of where you are, please consider participating in the moment of silence at 3 pm today to remember those who made the greatest sacrifice.

My 5 Favorite Grilled Foods
Many folks consider the Memorial Day weekend to be the "official" start of grilling season. Although hard-core grillers are known to grill year-round regardless of weather (I recall watching Greg wearing a winter coat and grilling on our deck as snow fell one blustery February evening a few years back), most people fire up the grill for the first time this weekend or on Memorial Day. In the spirit of the holiday weekend, I thought I'd share my top five favorite grilled foods, beginning with #5 and ending with my all-time favorite grilled delicacy.
5. Grilled Portobello mushrooms, especially when marinated in Greg's Happy Sauce, which unfortunately is no longer available. An excellent marinade you can use instead is Thomas Balsamic Vinaigrette. Simply marinate for about 30 minutes and then grill to desired doneness. You can enjoy the mushroom caps as "veggie burgers" or slice and serve with your favorite sides.
4. Grilled Peaches served over vanilla ice cream: Greg makes the most amazing grilled peaches using ripe but firm peaches that he's cut in half and removed the pit. A couple of years ago I posted his instructions for how to grill peaches and other fruit as well as the recipe for a glaze for grilled fruit. Glazed grilled peaches make a delicious summertime dessert on their own or over vanilla ice cream.
3. Grilled Venison tenderloin: Alas, without Greg's Happy Sauce it is impossible to enjoy the most amazingly delicious venison in the world. But I can recommend two other excellent marinades that will tenderize and "de-game" venison, for mouthwatering results that will please even those folks who say they don't like game. The first is Thomas Marinade, which is ready to use straight from the bottle, and the other is Ann's Marinade, which I like to blend with some olive oil so as to not dry out the venison while it marinates. In both cases, you'll get the best flavor by marinating overnight in the refrigerator.
2. Grilled grass-fed beef, especially NY strip: To me, grass-fed, all-natural free-range beef has far better flavor than regular grain-fed beef. It's also leaner, and I've read some articles saying that grass-fed beef is more nutritious. However, because grass-fed beef is leaner, it's less forgiving on the grill (in other words, it's very easy to overcook it, which can be a problem if you prefer medium-rare steak like I do). Greg has mastered the art, and in my opinion he gets the best flavor by using a simple pepper-based steak seasoning such as Knox Cracked Pepper Dry Rub or Char Crust Roasted Garlic Peppercorn.

Make sure you use fully-ripe pineapple, and spears are easier to grill than chunks or rings. You can then cut the spears into chunks if you want.

Yummy 'Yaki Pork Tenderloin
This recipe comes to us from the makers of Bone Suckin' Sauce and the other delicious, all-natural Bone Suckin' products. You'll need to marinate for at least 30 minutes, so plan accordingly. This pork tenderloin recipe serves 4 (simply multiply to feed more), and would make an elegant Memorial Day cookout entree.
Ingredients
1 lb Pork Tenderloin
1 bottle Bone Suckin' Yaki
1 Tbs dried rosemary (I prefer to use several sprigs of fresh rosemary)
1 tsp ground black pepper
Slice the tenderloin into 3/4" thick medallions. Place in a resealable plastic bag or a lidded container, add rosemary & pepper, and enough Yaki Sauce to coat well. Seal the bag or container and shake to combine, making sure all of the tenderloin is evenly coated. Marinate in refrigerator for at least 30 minutes. Discard used marinade and cook the medallions in oven at 350F degrees or on grill, for about 15 minutes or until done - make sure the pork is fully cooked! If you want to baste the medallions while they cook, use fresh Yaki sauce from the bottle.

PS: Another yummy, all-natural teriyaki sauce that I like to use in this recipe and others calling for teriyaki sauce is Olio & Spices Pomegranate Teriyaki Sauce from Israel, and it comes with recipes too!

Spicy Slaw
The Q Shack is a popular BBQ joint with locations in Durham (the original) and Raleigh NC. What distinguishes them from the typical NC barbecue joint is that the Q Shack specializes in non-NC styles of BBQ, including Texas brisket and St. Louis style ribs. They do, however, also make NC pulled pork BBQ, and their southern side dishes like collard greens, hushpuppies and slaw are excellent. Although I tend to prefer vinegar cole slaw over creamy cole slaw, the Q Shack makes a unique creamy slaw that I could eat every day because of the great crunch and unusual (for slaw) ingredients including apple, raw sweet potato and collard leaves -- okay, so that may sound really weird to some people, but trust me, it makes for really tasty slaw! Here is my spiced-up version of the Q Shack's slaw, just in time for your Memorial Day BBQ.
Ingredients
1 head of green cabbage, trimmed & sliced into thin strips
6 collard green leaves, stemmed & sliced into thin strips
1 raw sweet potato, peeled & julienned (sliced into matchsticks)
1 small red bell pepper, thinly sliced
2 green jalapeno peppers, deseeded & sliced into thin rings
Optional: 1 orange habanero pepper, deseeded & diced
1 green apple, unpeeled, cored & julienned
2 cups mayonnaise (regular or reduced-fat, but don't use fat free)
1 1/2 cups apple cider vinegar
1 cup sugar
1 Tbs celery seed
Coarsely-ground black pepper, to taste
Pinch of Kosher salt (omit if on sodium-restricted diet)
In a large bowl combine the cabbage, collard leaves, sweet potato, peppers and apple. In a separate bowl, whisk together the mayo, vinegar, sugar, celery seed, black pepper and salt, whisking until smooth and creamy (you can do this in a food processor on LOW setting, but I like to do it by hand). Slowly add the desired amount of this dressing into the large bowl of slaw veggies and stir to combine (you can store any leftover dressing in a lidded glass jar in your fridge for a couple of days, and it's also good on other veggie salads and even on canned-bean salads). Serve with pulled pork and other barbecue/grilled foods, or as a side for fried seafood, etc.

Sparkling Ginger-Tea Cooler
Here is a refreshing alternative to ordinary iced tea, just in time for your Memorial Day BBQ or cookouot! This recipe serves 16, and you can multiply it to serve more. You can prepare it without the ginger ale and store in the refrigerator until ready to serve.
Ingredients
2 "family-size" tea bags
3 quarts boiling water
1/2 cup sugar
1 12oz can frozen lemonade concentrate
1 liter ginger ale, chilled
Steep the tea bags in the boiling water for 10 minutes, then add the sugar and stir until dissolved. Add the lemonade concentrate and stir to dissolve. If not serving right away, store in the refrigerator to chill and keep cold. Just before serving, pour in the cold ginger ale. You can serve this sparkling cooler "straight" or over ice.

Tzatziki Sauce
Tzatziki is a creamy, refreshing Greek yogurt-cucumber sauce that's great with traditional Greek dishes like falafel, gyro, souvlaki and pita - but it also complements grilled meats, chicken & veggies, roasted potatoes, salads & veggies, and more. I like to use tzatziki sauce as an alternative to tartar sauce for fish and seafood, and it's also a wonderfully cooling and soothing accompaniment to fiery dishes. This recipe makes 4 servings, and easily multiplies for more. Tzatziki is best when served fresh, and you definitely want to use Greek yogurt or other rich, natural yogurt.
Ingredients
1 small cucumber
1 1/2 cups plain Greek yogurt (preferably NOT fat-free or low-fat)
2 garlic cloves, finely minced
1 Tbs chopped fresh mint
1 Tbs chopped parsley
Salt to taste
Paprika* to taste
Opt: Additional chopped parsley for garnish
Combine the yogurt, garlic and herbs in a bowl. Peel the cucumber, cut in half lengthwise and use a teaspoon to scoop out the seeds. Dice the cucumber into the bowl and stir until everything is combined. Ole Time BBQ Sauce & Hot Sauce are Back!
Good news for fans of Ole Time Barbecue: After an absence of about 6 months, both the original Ole Time BBQ Sauce and the spicy Ole Time Hot Sauce are FINALLY back in stock and available for purchase from the Carolina Sauce Company online store! Ole Time BBQ is a beloved old BBQ joint in Raleigh, NC, that serves some of the best eastern NC-style pulled pork barbecue, hushpuppies and collards in the area. In the past year they've been quite busy with their new second location, and had to "back-burner" the commercial bottling of their two famous sauces. But this morning I received the phone call I had been waiting for since January: The sauces are back! And as of this afternoon, we have fully re-stocked both products. The original Ole Time Barbecue Sauce is a family recipe from the tiny hamlet of Snow Hill NC that's been handed down for at least 3 generations, and blends a little ketchup as well as some unusual ingredients into the tangy vinegar base for a rich, robust old-fashioned flavor. Ole Time Hot Sauce is a spicier, more typical eastern NC barbecue sauce consisting of the traditional vinegar base with plenty of red and black pepper, spices and no tomatoes or sugar. Both sauces are wonderful on pulled pork barbecue, of course, but are also great for marinating and basting ribs and other meats as well as chicken. I like to add a few splashes of the Hot Sauce to collards and other greens, fried catfish, hushpuppies, fries, and even scrambled eggs. The Barbecue Sauce adds great flavor to ground beef recipes including meatloaf, burgers and sloppy joes. Fiery Mango Salsa
Mango salsa is a festive tropical alternative to ordinary tomato salsa when served with tortilla chips, and also doubles as a devilishly delightful condiment for grilled or broiled seafood and chicken. You can even spoon it into sandwiches and wraps or over burgers. Mango salsa is best when homemade, and you can make it the night before and store in your refrigerator overnight. If you don't like cilantro, simply leave it out.
Ingredients
1 ripe but firm mango
2 jalapeno peppers (I like to use 1 red & 1 green but you can use 2 green)
1 habanero pepper
4 green onions
1 garlic clove, minced (I like to use a clove of hot pickled garlic)
Juice of 1 lime
1 small bunch (or to taste) cilantro
Pinch of Kosher salt
Peel and dice the mango into a non-metal bowl (glass is best but you can use plastic), catching the juices in the bowl. De-seed and chop the hot peppers and add to the bowl. Thinly slice the green onions including some of the green tops, and add to bowl. Peel and finely mince the garlic and add to the bowl. Chop the cilantro and add to the bowl, together with a pinch of Kosher salt and the juice of 1 lime. Stir everything together to combine, and either serve or cover and store in refrigerator until ready to use.

Caramelized Cajun Onions
These Cajun-spiced caramelized onions are a wonderful accompaniment to steak, grilled sausage, omelets, quiche, burgers, sandwiches and more. You can make a whole bunch and store in an airtight container in your fridge to use over the course of a few days. Adjust the amount of Cajun seasoning to your taste.
Ingredients
2 Tbs olive oil (not extra virgin)
2 Tbs butter (you can substitute bacon grease for some of the butter, up to 1 Tbs)
2 large sweet onions
2 cloves garlic, minced
Your favorite Cajun seasoning, such as Slap Ya Mama Cajun Seasoning or Louisiana Bayou Blend Seasoning (salt-free!) or Durn Good Cajun Spice Blend (on sale!)
Heat the olive oil and butter (and bacon grease if using) in a large saute pan over medium heat until the butter is melted, stir to combine. Add the onions and cook, stirring occasionally (I like using a wooden spoon), until the onions soften and start turning deep golden brown - that means they're caramelized. This will take about half an hour. Note: If the onions start sticking to the bottom of the pan, you can add a little more oil or a small splash of red or white wine to deglaze (use just enough to help you scrape the onions off the bottom). Stir in the garlic and cook for a couple of minutes. Season to taste with your favorite Cajun seasoning - I use a healthy sprinkling, then stir and taste for flavor balance, adding a little more seasoning if necessary. Remove pan from heat and let cool for 5 minutes, then serve or store in a sealed container in your refrigerator.

Back in March, I posted an email from a recently deployed soldier serving in Afghanistan who was disappointed to learn that Operation Sauce Drop (our nonprofit program that sends free sauces to deployed troops) was out of money and unable to send him a gift box of zesty sauces at that time. Thanks to the kindness of folks who donate to support Operation Sauce Drop, the program is once again up and running, and "Grill Sergeant Gary" (as well as other troops) has since received a free gift box of sauce.

Quick Applesauce Parfaits
Surprise Mom on Mother's Day with breakfast in bed featuring this scrumptious and healthy recipe that anyone (even kids) can make! This very simple recipe makes a breakfast treat or dessert for two. The key is to use the best quality ingredients such as all-natural applesauce and real whipped cream, if possible. Serve in two wine goblets or parfait glasses for a pretty presentation -- or just layer in a large mug or a small bowl if that's easier for you. You can double this recipe if you want to make 4 parfaits.
Ingredients
1 cup good quality granola (break into small chunks if necessary)
1 cup all-natural chunky applesauce (I use Mullen's Apple Sauce)
1 container whipped cream or whipped topping (you won't use the whole thing)
Slivered almonds for topping
Ground cinnamon for topping
Note: When you're ready to assemble the parfaits, keep in mind that you'll want to have at least two "sets" of the three different layers (granola, applesauce, whipped cream) in each glass, and in any event you will want the top layer to be whipped cream. Also keep in mind that the ingredient quantities above are flexible, and you may end up with a little left over or need a little more, all depending on the size of your wine or parfait glasses (or bowl or mug).
Spoon some of the granola into the bottom of each glass. Spoon some of the applesauce on top of the granola. Top with a little of the whipped cream as the third layer, to finish the first "set" of layers. Repeat the three layers until the glass is full, with whipped cream as the final layer. Lightly dust with cinnamon to taste, and with a light sprinkling of slivered almonds. Serves two.

Spicy-Sweet Lemon Bread
This delicious quick bread is even better the next day, so plan on making it the day before your Mother's Day brunch (or whenever else you want to enjoy it) and let it sit overnight in the pan. If you prefer a non-spicy version, simply omit the Lemon Vanilla Hot Sauce.
Ingredients
1 lemon
1/3 cup shortening, melted
1 cup sugar
2 eggs
1 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp salt
1/2 cup milk
1/3 cup sugar
1 to 2 tsp (to taste) Toad Sweat Lemon Vanilla Dessert Hot Sauce
Carefully zest the lemon with a fine grater or zester (make sure you get only the yellow rind and none of the white pith), and reserve the grated zest. Juice the lemon into a glass or ceramic bowl and set aside.
Preheat oven to 350F degrees, and grease a 4x9x3 loaf pan (I prefer a Pyrex or ceramic pan instead of a metal pan, if possible). In a large bowl cream together the melted shortening, 1 cup of sugar, and eggs. In another bowl sift together the flour, baking powder and salt. Alternate adding some of the sifted flour mix and some of the milk into the large bowl containing the creamed mixture, stirring each time, until all is combined. Fold in the grated lemon rind, then pour the combined mixture into the baking pan. Bake in oven at 350F degrees for 45 to 50 minutes. While the bread is baking, add the remaining 1/3 cup sugar and the Lemon Vanilla Hot Sauce to the lemon juice and stir to mix thoroughly. Let stand at room temperature while the bread bakes. When bread is done (a toothpick inserted in the middle comes out clean), remove from oven and immediately pour the lemon juice mixture evenly over the top of the bread. For best flavor and easier cutting, let sit in pan overnight before cutting and serving.

April's Top 10 Best-Selling Sauces & Seasonings
There were fewer surprises last month on our list of top ten best-selling sauces and seasonings across all product categories at the Carolina Sauce Company, but one of them was the debut of a savory & smoky mustard-tomato BBQ sauce made its first top 10 appearance, coming in at 8th place. Keep reading below to see which products finished on top for April 2010:
1. Our all-time best-seller, Castle Sauce, is back in first place where you can usually find it each month. This mustard-tomato burger and steak sauce from Greensboro NC has three generations of fans, and with its zippy, food-friendly flavor and rich, thick texture its popularity should come as no surprise.
2. Moving up four spots from March, Scorned Woman Hot Sauce came in second last month. Scorned Woman is a classic vinegar-based hot sauce made with a blend of fiery chili peppers and black peppers for straightforward heat that will add serious spice to your food without changing its flavor.
3. After finishing first in March, Matouk's West Indian Hot Sauce slipped down to third place for April, which is still quite impressive. 1. Our all-time best-seller, Castle Sauce, is back in first place where you can usually find it each month.
