BBQ Spiced Pumpkin Seeds

Pumpkin seeds are a tasty and nutritious snack, and they're especially good when roasted at home and seasoned to your liking. Here's a simple recipe that you can make with your favorite barbecue seasoning. I like using Pig Pen's Original Seasoning for traditional barbecue flavor, or Pepper Dog Dry Rub for Southwestern flavor.

Start with 1 cup of raw pumpkin seeds - if using seeds freshly scooped from a pumpkin, make sure you rinse the seeds to clean off any pulp or fibers, then dry them by spreading on an oiled cookie sheet and baking for half an hour in your oven at 300F degrees. Remove the sheet from the oven and place the dried pumpkin seeds in a bowl. Add 2 tablespoons of melted butter, and 2 tablespoons of your favorite dry rub or BBQ seasoning . Toss to combine and coat the seeds evenly. Spread the coated seeds on the cookie sheet and roast in the oven at 375F degrees or until lightly toasted. Remove from oven and allow to cool to the touch, then enjoy!
