Ginger & Spice Cookies

These old-fashioned cookies will fill your house with the wonderful aroma of holiday spices while they bake.

Ingredients
1 1/2 sticks of margarine, melted
1 cup granulated sugar, plus more for rolling
1/4 cup dark molasses
1 egg
2 cups plus 1 Tbs flour
1/2 tsp ginger
1/2 tsp cinnamon
2 tsp baking soda
1/2 tsp cloves
1/2 tsp salt
Dash of nutmeg
Dash of allspice

Beat together the melted margarine, 1 cup sugar, molasses and eggs, until thoroughly combined. Refrigerate until cool, about 30 minutes or so. Stir in the rest of the ingredients, then cover and refrigerate for several hours until this dough is stiff. When ready to bake, preheat oven to 350F degrees. Roll the dough into marble-size balls, then roll each ball in granulated sugar. Place the balls on a greased cookie sheet about 2 inches apart from each other and bake at 350F until they start to flatten. Makes about 18 cookies.
