If you want to make something special for Hanukkah, try this rich and tasty alternative to traditional potato latkes. Enjoy these cottage cheese latkes with applesauce, smoked salmon, pickled herring, or even chutney if you wish.
Ingredients
1 cup cottage cheese (you can use low-fat)
3 eggs
1 cup milk (you can use reduced-fat)
1 cup matzoh meal
1/2 to 3/4 tsp salt (can adjust to taste)
1/4 tsp coarsely ground black pepper
1/4 tsp garlic powder
1 Tbs chopped chives
1/2 tsp chopped dill
Canola or vegetable oil for frying
Place cottage cheese in a large bowl and use a hand-held immersion blender to cream it (you can also just blend the cottage cheese in a regular blender and then pour into a large bowl). In a small bowl beat together the eggs and milk, then stir into the cottage cheese in the large bowl. Mix in the matzoh meal, salt, pepper, garlic and herbs. Pour some oil into a frying pan, heat over medium-high heat, then carefully pour 1/4 cup of the cottage cheese batter into the hot oil. Use the back of the ladle or a spoon to flatten the middle of the pancake so that it will cook. Fry for a few minutes until golden brown, then carefully flip over with a spatula to fry the other side for a few minutes until golden brown. Once browned on both sides, remove from oil and drain on paper towels. Repeat with remainder of batter.
