Spicy Peach-Pecan Vinaigrette

This recipe was inspired by a grilled chicken salad recipe from Whole Foods, which included a peach-pecan dressing. I played with the dressing ingredients and spiced them up a bit. You can use this dressing on grilled shrimp, fish and other seafood as well as with chicken, pork, vegetables & salad. Feel free to adjust the amount of vinegar, oil and hot sauce (or even the other ingredients) to suit your taste.

Ingredients
2 fresh ripe peaches, peeled, quartered & pitted
2 Tbs sherry vinegar or champagne vinegar
1 Tbs canola oil or light olive oil
scant 1/4 cup toasted pecans
1 Tbs chopped candied ginger
1 tsp (or to taste) Dave's Gourmet Ginger Peach Hot Sauce

Place all ingredients in a food processor or blender and puree until smooth, adding a tablespoon or more of water if necessary to thin. Taste for balance, and add salt and/or pepper (or more of the hot sauce) if desired. If you prefer a silkier dressing, press through a fine sieve. Use right away or store in a lidded glass bottle in the refrigerator for a few days (shake before using).
