Spicy Peach-Teriyaki Chicken

This peachy recipe, which I'm sharing in celebration of National Peach Month, was inspired by one from the makers of Yam Good Sauce.

Ingredients
1/2 cup peach marmalade or preserves (I like Mrs. Picky Fanicky's Peach Cocktail MmmMarmalade)
Dash or two of peach hot sauce, such as Dave's Gourmet Ginger Peach Hot Sauce or Georgia Peach & Vidalia Onion Hot Sauce
3 Tbs Teriyaki sauce
2 Tbs Dijon mustard
1 tsp ground ginger
2 garlic cloves, peeled & minced
4 boneless, skinless chicken breasts

In a small bowl combine all ingredients EXCEPT the chicken. Place the chicken in a resealable plastic baggie and pour in this marinade, seal the bag and shake to thoroughly coat the chicken. Place in refrigerator and marinade for 30 minutes to 2 hours. Cook the chicken either on the grill or in the oven (pour chicken & marinade into a casserole dish, 375F degrees) until fully cooked. Serve over cooked rice.
