Spicy Mediterranean Marinade for Fish & Seafood

This full-flavored spicy marinade was originally created for use with beef by Sonya of Just My Taste Jalapeno Dip & Sauce, but I think it's fabulous with fish, shrimp and other seafood. You can store unused marinade in the refrigerator for up to a week (always discard used marinade). When marinating fish or seafood, 30 minutes to an hour in the refrigerator is sufficient. For poultry, beef and other meat, I recommend at least 2 hours to overnight in the refrigerator.

Ingredients
2 cups Just My Taste Jalapeno Dip & Sauce (adjust to your taste)
3 tablespoons fresh oregano, chopped (or 1 to 1 1/2 Tbs dried oregano)
Juice of 1/2 fresh lemon or lime
1/4 cup extra virgin olive oil

Combine all ingredients in a bowl and whisk together; makes 2 1/4 cups.
